Tomatoes and Cream with Pasta

This dish is simple, flavorful, elegant and very inexpensive.
  • 2 Tablespoons butter
  • 1 or 2 garlic cloves finely chopped
  • 2 cups cherry tomatoes
  • ½ cup heavy whipping cream
  • ¼ cup shredded fresh basil
  • ¼ Teaspoon salt
  • ¼ Teaspoon black pepper
  • ⅓ pound long pasta (linguine, fettucine, capellini or angel hair -- but for me thinner is better)
  • ¼ cup parmesan cheese
  1. Bring 4 quarts of water to boil and cook pasta (follow directions on package)
  2. Melt butter in skillet
  3. Add garlic and sauté one minute
  4. Add tomatoes and sauté about two minutes
  5. Stir in cream and bring to a slow boil. Simmer one or two minutes until slightly thickened
  6. Stir in basil, salt, pepper
  7. Pour sauce over pasta
  8. Serve
  9. Top with Parmesan cheese
