Southwest Fillet of Sole

The cumin, jalapeno and cilantro give this dish a warmth and south of the border flavor profile. Quick & easy to prepare; Low calorie; Low fat.
- 2 6 oz. sole fillets
- ½ cup cilantro leaves, finely chopped
- 1 green onion, chopped
- 1 to 1½ teaspoon diced jalapeno pepper
- 2 tablespoon lime juice
- ⅓ teaspoon ground cumin
- Stir cilantro, green onion, jalapeno pepper, lime juice, and cumin together in a small bowl.
- Spread the seasoning mixture on both sides of the fish fillets and bake in a 350 degree oven for 20 to 30 minutes, or until fish flakes easily with a fork.
