An easy fish dish with a mild taste - perfect for weeknight dinners. Easy to prepare; Low calorie; Low fat.
  • 1-lb. sole fillet
  • ½ cup fresh lemon juice
  • 2 tablespoon grated nonfat Parmesan cheese
  • ¾ teaspoon lemon pepper
  • Lemon slices, for garnish (optional)
  1. Spray shallow baking dish with cooking spray.
  2. Place sole in baking dish; pour lemon juice over top, cover with plastic wrap and refrigerate at least 1 hour.
  3. Line broiler pan or baking sheet with foil and spray with cooking spray.
  4. Remove fish from baking dish and place on baking sheet; sprinkle with Parmesan cheese and lemon pepper.
  5. Broil 4 to 5 minutes, until fish flakes easily with a fork.
  6. Garnish with lemon slices, if desired.
