  • 6 oz. rigatoni
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups chopped red bell pepper
  • 2 cups tomato juice
  • 2 tsp. leaf oregano, crumbled
  • 2 tsp. leaf basil, crumbled
  • 1 tsp. garlic powder
  1. Cook pasta according to package directions.
  2. Add broccoli and cauliflower during last 5 minutes of cooking pasta.
  3. Drain, rinse, and transfer to a bowl.
  4. Add pepper and chill.
  5. Combine tomato juice, oregano, basil and garlic powder.
  6. Toss with pasta.
