Jicama

Description: Jicama is actually a legume that looks similar to a turnip or a large radish. The average size of a jicama at market is about 3 lbs though they can grow up to 50. Jicama have a juicy and crunchy flesh and light brown extrerior.

Facts: Popular dietary staple in Central and South America. The skin is typically peeled before eating it raw. Raw jicama tastes similar to a pear or apple. It also does not discolor when exposed to the open air.

Availability: year round

Serving Size: ˝ cup

Selection: Select tubers that are firm and unblemished with a slightly silky sheen without any bruises or scars.

Storage: It can be stored for up to 2 weeks in a plastic bag in the refrigerator.
