Sweet Potato

Description: A long irregularly shaped cylinder with a red “woody” skin and bright orange interior.

Availability: Year round

Facts: African slaves in the American South called the sweet potato “nyami” because it reminded them of the starchy, edible tuber of that name that grew in their homeland. The Senegalese word “nyami” was eventually shortened to the word “yam”. Though the yam is actually different from the Sweet Potato as the flesh is yellow and not as sweet

Serving Size = 1 CUP

Selection: Choose firm, small- to medium-sized potatoes with smooth skin. Avoid cracks, soft spots and blemishes.

Storage: Store in a cool, dark place for use within 3-5 weeks.
