Sweet Corn

Description: Long cylindrical “ears” with small yellow kernels. Fully ripe sweet corn has bright green, moist husks.

Availability: Summer

Facts: A variety of corn with a high sugar content. Picked when still immature and eaten as a vegetable instead of a grain. 50% of Iowa farmland is used for growing corn.

Serving Size = 1/2 CUP

Selection: Choose ears with green husks, fresh silks and tight rows of kernels.

Storage: Refrigerate with husks on for use as soon as possible or within 1-2 days.
