Tangy Mustard Cauliflower

Serves:  4

 
1 medium head cauliflower
˝ cup fat-free mayonnaise
1 to 1˝ tsp. prepared mustard
1 green onion, sliced
2 oz. shredded fat-free Cheddar or American cheese
 
Place the cauliflower in a large saucepan, cover with water, and boil over high heat until crisp and tender. Drain well. Combine mayonnaise, mustard, and onion in a small bowl and spread over the cauliflower (on a serving platter.) Sprinkle with cheese, cover and let stand a few minutes until cheese is melted.
