Summer Veggie Salad

Serves:  4
 
1 cup cauliflower
1 cucumber, cubed
2 large tomatoes, cubed into large pieces
2 green onions
1 lb. can bean sprouts
1 8 oz. can water chestnuts (drained)
Italian fat-free dressing
fat-free sour cream
sliced red onion
fat-free Parmesan cheese
 
Combine cauliflower, cucumber, tomatoes, green onions, bean sprouts, and water chestnuts in a large bowl. Add salad dressing and sour cream, alternately, until of desired coating and taste. Place slice onion on top and sprinkle with small amount of fat-free Parmesan cheese.
Great summer salad!!
