Hot Spinach Salad

Serves:  6 to 8

 
8 cups fresh spinach, cut up 
1 small red onion, sliced thin 
4 hard cooked egg whites, cut up
1 8 oz. can sliced water chestnuts, drained 
1 8 oz. can mandarin oranges, drained
fat free Italian dressing 
½ to ¾ cup fat free croutons
½ cup fat free Baco Bits (optional)
 
Wash and drain spinach; then cut up. Add onions, water chestnuts and oranges and toss lightly. Add croutons and cooked egg whites. Heat dressing and pour over salad just before serving. Add Baco Bits*, if desired.
