Serves:  6

12 oz. canned yams, sliced and drained 
3 cups sliced carrots, parboiled 
1/3 cup brown sugar
1/3 cup orange juice concentrate
8 large pitted prunes
¼ cup sherry wine
½ cup crushed pineapple with juice 

Preheat oven to 300°F. Combine all the ingredients in a casserole lightly sprayed with cooking spray. Cover casserole and bake 3 to 4 hours. Casserole can be made ahead and frozen. Cover when reheating.
