| 12 oz. canned yams, sliced |
1/3 cup orange juice concentrate |
| and drained |
8 large pitted prunes |
| 3 cups sliced carrots, parboiled |
¼ cup sherry wine |
| 1/3 cup brown sugar |
½ cup crushed pineapple with juice | Preheat oven to 300°F. Combine all the ingredients in a casserole lightly sprayed with cooking spray. Cover casserole and bake 3 to 4 hours. Casserole can be made ahead and frozen. Cover when reheating.
