Pureed Parsnips

Serves 4
 
Ingredients

1- 1 ½ lbs of parsnips

2 Tbsp butter

Preparation

  1. Scrub well or peel.
  2. Cut into 2 – 3 inch lengths
  3. Place in steamer basket and cook until parsnip pierces easily with a knife – about 10 minutes. Reserve cooking liquid.
  4. Place cooked parsnips in food processor and blend adding cooking liquid to get the desired consistency.
  5. Slightly re-heat and stir in butter.
  6. Serve

Variations
