Yield: 3 cups     Serving Size: ½ cup

1 lb. green beans ⅛ cup white wine vinegar
1 tbsp. olive oil 1 tbsp. Parmesan cheese
¼ cup red onion, chopped ¼ tsp. thyme
1 garlic clove, minced ¼ tsp. black pepper
12 cherry tomatoes, halved ⅛ cup water
⅓ cup fresh parsley, chopped  

Heat oil in a nonstick pan and add tomatoes, onion, and garlic. Cook for 2 minutes. Add white wine vinegar, green beans, thyme, black pepper and water. Cover and simmer for 10 minutes or until beans are tender. Sprinkle Parmesan cheese on top.
