Grilled Portobella Mushroom Salad with Herbed Balsamic Vinaigrette

Ingredients

Portabello Mushroom Salad:
4 cups Chopped Romain and Bibb lettuce
4 Medium size Portobello
1 Medium size red pepper, cleaned and diced
1 Medium carrot, peeled and grated
1/3 cup Grated Parmesan cheese

Herbed Balsamic Vinaigrette:
1/4 cup Olive oil
1/4 cup Canola oil
1 3/4 cup Balsamic vinegar
1 tsp. Chopped shallots
1 tbsp. Chopped garlic
1 tbsp. Chopped fresh basil or 1 tsp dried basil
1 tbsp. Chopped freash parsley or 1 tsp. dried parsley
1/8 tsp. SalPreparation

Combine vinaigrette ingredients and shake well. Place greens in a large serving bowl and toss with vinaigrette dressing. Place remaining salad ingredients on top of salad and toss.
