Beets

Description: Beets are a globe shaped fruit that can be deep red, golden or white in color.

Facts: Sugar is produced from one variety (Sugar Beets). The red color of the beet is used in food coloring and was used for early clothing dyes. They may be eaten raw or cooked.The beet and the tops can be eaten

Availability: July – October

Serving Size: ˝ cup

Selection: Choose beets with firm, smooth skins and non-wilted leaves if still attached. As with many vegetables, the flesh of smaller beets is tenderer.

Storage: Remove leaves, leaving about an inch of the stems. Use leaves as greens- raw or cooked. Store roots in a plastic bag in refrigerator for up to 3 weeks. Wash before cooking.
