Ingredients
  • 1 ½ lbs of parsnips
  • 2 Tbsp olive oil
  • Salt
  • Pepper
  • Parsley
Instructions
  1. Preheat oven to 425 degrees
  2. Scrub or peel parsnips and cut into 1 inch pieces.
  3. Toss parsnips in olive oil and salt
  4. Place in single layer on baking sheet
  5. Shake pan halfway through to flip parsnips
  6. Roast until golden and tender (30 minutes)
  7. Sprinkle with parsley and serve

Variations

WITH BACON AND ROSEMARY:

Preheat oven to 425 degrees
Scrub or peel parsnips and cut into 1 inch pieces.
Pre-cook 3 oz of bacon (3 slices) – crumble set aside
Toss parsnips and rosemary in bacon fat
Place in single layer on baking sheet
Shake pan halfway through to flip parsnips
Roast until golden and tender (30 minutes)
Add bacon pieces and parsley and serve

WITH HONEY AND SPICES:

1 ½ lbs of parsnips
2 tbsp butter (melted)
1 tsp honey
¼ tsp ginger
1/8 tsp allspice
1/8 tsp nutmeg

Preheat oven to 425 degrees
Scrub or peel parsnips and cut into 1 inch pieces.
Mix melted butter, spices and honey
Toss parsnips in butter honey mixture
Place in single layer on baking sheet
Shake pan halfway through to flip parsnips
Roast until golden and tender (30 minutes)
