Grilled Brie and Pear Quesadillas

This is a creamy and sweet version of a classic. An excellent and elegant combination. Quick to Prepare (under 30 minutes); Vegetarian; Good Source of Calcium
  • 1 tablespoon butter
  • 1 large onion, peeled and sliced
  • 4 burrito size flour tortillas
  • 6 oz Brie cheese, sliced
  • 1-1/2 cup shredded Monterey jack cheese
  • 1 small, ripe Bartlett pear, cored and thinly sliced
  • 2 tablespoon chopped fresh thyme
  1. Melt butter in a large skillet.
  2. Add onion and cook over medium heat for 10-15 minutes or until caramelized stirring frequently.
  3. Lay tortillas on a flat surface.
  4. Place equal amounts of cheeses, pears, caramelized onions and thyme on half of each tortilla; fold over to enclose filling.
  5. Place on a grill over low heat and cook for about 3-5 minutes per side or until cheese is melted and tortilla is crisp and golden.
