Features an ancient whole grain and is good for people with gluten allergies.
Ingredients
  • ½ c. melted butter or ½ c unsweetened applesauce (for less calories)
  • 1 cup sugar
  • 2½ cup spelt flour
  • l teaspoon baking soda
  • ⅛ teaspoon salt
  • ¾ cup chopped nuts (optional)
  • 3 ripe bananas (mashed)
  • 1 teaspoon vanilla
Instructions
  1. Cream butter and sugar
  2. Add eggs and mix well
  3. Combine dry ingredients
  4. Add to liquid mix.
  5. Mix well.
  6. Add bananas and nuts.
  7. Fill greased muffins tins.
  8. BAKE @ 375 degrees for 20-25 mins.
